Ingredients for 4-5 servings:

• 250 g lentils

• 120 g oats

• 1 carrot

• 1 medium onion

• 1 clove garlic

• 2 tablespoons parsley

• 2 teaspoons cumin

• 5 tablespoons olive oil

• salt

• pepper

• 1 bay leaf

Preparation:

Boil the lentils in plenty of water with the bay leaf, drain them and mash in the food processor. Pour the mashed lentils into a bowl, add the salt, pepper, olive oil, finely chopped carrot, finely chopped onion, crushed garlic, oats, cumin and finely chopped parsley, and shape into meatballs. Bake in a preheated oven at 180o C for 20 minutes. Serve either plain or with a sauce of your choice.

Tip: you can make delicious “meatballs” by replacing the cumin in the recipe with 2 tablespoons of mint.
