Ingredients for 4 servings:

• 500 g Fava Beans

• 3 large dried onions

• Extra virgin olive oil

• 1 lemon

• Salt

• Freshly ground pepper

Preparation:

Rinse the fava beans well in a colander and add to the pot with water to cover the legumes by 2 to 3 cm. When the fava beans begin to boil, remove the foam with a slotted spoon. Then add an onion cut into quarters, salt and pepper. Boil the fava beans for about 1 hour over low heat without stirring at all, until they become porridge like. Remove from heat and allow the fava beans to cool. Puree in a blender until obtaining a thick cream. Peel the remaining onions and finely chop. Serve the fava beans on a platter and garnish with the chopped onions, drizzle with olive oil, lemon juice and sprinkle with a little freshly ground pepper. You can serve the fava beans with onions sautéed in oil. Can be served hot or cold as an appetizer, but also as a main course.
