Ingredients for 4 servings:
• 500 g beans
• 2 onions
• 2 cloves garlic, grated
• 4 carrots
• 3 tablespoons chopped celery
• 2 tablespoons tomato paste
• 2 cups grated tomato or tomato concassé
• 2 country sausages (about 100 g each)
• 2 tablespoons chopped parsley
• ½ cup olive oil
• salt
Preparation:
Soak beans according to the instructions on the package. Peel and finely chop the onions and carrots. Add the beans, carrots and onions to the pot with 3 cups of water. Dissolve the tomato paste in a little water and add to the pot. Add the grated tomato and celery and boil without salt over medium heat for 45 minutes. Add salt and continue boiling for an additional 20 minutes. Cut the sausage into thin slices. Sauté in 3-4 tablespoons of olive oil for a few minutes, drain and mix with the boiled beans. Pour food into an oven proof dish and bake at 200o C for 30 minutes. Sprinkle with parsley and serve.
