Ingredients for 4 servings:

• 250 g fava beans

• 4 tablespoons olive oil

• 1 medium onion

   coarsely chopped

• salt

• pepper

• 1 liter hot water

• cherry tomatoes to garnish

For the basil pesto:

• 1/2 bunch fresh basil

• 25 g pine nuts

• 1 clove garlic

• salt

• pepper

• 80ml (5 tablespoons) olive oil

Preparation:

Rinse fava beans in running water and drain well. In a deep non-stick pan, heat olive oil and sauté the onion until it becomes glossy. Add the fava beans, salt and pepper and sauté for one minute while stirring. Then add the water and as it starts to boil, remove the foam with a spoon. Reduce heat and simmer the fava beans for 45-50 minutes until they thicken. Stir regularly and be careful not to let it stick (add hot water if necessary). When the fava beans have thickened, turn off the heat and mash with a hand blender. Next, prepare the basil pesto by adding and pureeing all the ingredients in a food processor. Add the pesto to the fava beans and mix gently. Serve with cherry tomatoes, a few drops of olive oil and plenty of freshly ground pepper.
