Ingredients for 4 servings:

For the pork:

• 1 kg boneless pork leg cut into portions

• 2 onions

• 2 cloves garlic

• 4 sprigs celery

• 4 carrots

• 2 cups tomato concassé

• 1 cup white wine

• salt

• pepper

For the mashed beans:

• 4 cups boiled beans

• 1 teaspoon paprika

• 1 cup lukewarm meat or chicken broth

• 4 tablespoons olive oil

• vinegar

• salt

• chopped parsley

Preparation:

For the pork: Peel and finely chop onions, garlic and carrots. Peel and finely chop the celery. In a saucepan, heat 1/4 cup olive oil and sauté the onion, garlic, carrots and celery. Add the pieces of meat and sauté on all sides. Add the wine, add the tomatoes, 2 cups lukewarm water, salt and pepper and boil for 1 ½ hours over medium heat.

For the mashed beans: Soak and boil beans according to the instructions on the package. Add the boiled beans to the food processor with the broth, 4-5 tablespoons olive oil, 2 tablespoons vinegar, paprika and a little salt and puree. Serve the pork and its sauce with the mashed beans and sprinkle with chopped parsley.
